Background:

Wolichu Wachu is the rather splendid name of a washing station owned and run by a farmers cooperative in Guji, Ethiopia. Starting operations only in 2017, it's a relatively modern washing and processing station and was designed to take account to the most up to date insights into speciality coffee production.

This coffee was harvested between Feb-April 2019 when it reached peak ripeness. The coffee cherries were dried in a single layer at first, but then in a thicker layer to slow down the drying time. Total drying time was two to three weeks. There's a big jammy body in this coffee which makes a wonderful espresso, but it's also a kick-ass filter coffee if you want to try it that way too.
